For many business owners, getting you to quit your job would give them more leverage in the negotiations, so keeping your job until you have an offer is a good way of keeping the leverage on your side. Of course, it could go even worse from this situation, for instance, if you quit your job because a greater opportunity presents itself, only to dry up once you have left your job, then your situation can quickly deteriorate into something quite disastrous.
